First prepare the herb rub. Finely chop the rosemary and thyme, and add the salt, pepper, and sugar. Mix everything together, spread the rub on a large cutting board, and rub the pork chops in the rub.2. Heat some olive oil in a pan over medium heat and sear the pork chops on both sides.3. Halve the pears and remove the core with a spoon. Add the halved pears to the pan with the pork chops.4. Now add the bourbon to the pan and flambé the pork chops and pears.5. Reduce the heat a bit and add the orange juice, lemon juice, and honey. Finish everything off by adding the butter to the pan along with the crumbled gorgonzola. Allow the sauce in the pan to thicken over low heat.6. This dish goes perfectly with some green beans and potatoes on the side! Boil the halved fingerling potatoes and green beans. Heat some olive oil in a pan and fry the potatoes in it. Then add the diced bacon and onions and continue to fry everything until the bacon gets crispy. Finally, add the green beans and season with salt and pepper.Flambeeing is not just for dramatic effect – it also adds a beautiful, smoky flavor to the dish.
