Preheat the oven to 350°F. Prepare the batter for the sponge cake by whisking the egg whites and sugar until frothy and then gradually add the egg yolks. Mix the flour with the baking powder and stir this mixture alternately with milk into the egg white mixture. Line a baking sheet with parchment paper and bake the cake for about 12 minutes until golden brown. Allow the cake to cool and cut it into 6 square pieces.2. Now you can get started on the white chocolate cream. Bring the heavy cream to a boil for just a second, then pour it over the white chocolate chips. Mix everything until the chocolate has completely melted and then allow it to cool a little. Add the sugar, sweetened condensed milk, cream cheese, and heavy cream and beat everything with a mixer until a fluffy mass starts to form. Refrigerate the white chocolate cream for about 30 minutes.3. Place 2 oblong rectangular strips of parchment paper crosswise in front of you and place the first cake square in the center. Then slice the kiwis, strawberries, and oranges. Spread some of the white chocolate cream on top of the cake and then put a few kiwi slices on top. Now layer the cake in the following order: cake, cream, strawberries, cake, cream, oranges, cake, cream, strawberries, cake, cream, kiwis, cake.4. Coat the entire cake with the white chocolate cream. Transfer the rest of the cream into a piping bag and pipe it in a grid pattern on the cake.5. Cut the remaining fruit in such a way that you can make them look like flowers on the cake. Place all the components on the parchment paper that you laid out before, lift up the parchment paper, and press the fruit pieces against the sides of the cake.Garnish the cake with the rest of the fruit and fresh mint leaves and sprinkle some hazelnut brittle around the bottom of the cake. This layered cake is almost too pretty to eat. Almost.
